  • 2 pounds lean ground beef Can be substituted with ground turkey or plant-based options.
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) diced tomatoes
  • 3 cups beef broth Can be replaced with vegetable broth.
  • 1 can (15 oz) tomato sauce
  • 2 cups dry elbow noodles Other pasta shapes can be used.
  • 1.5 cups shredded sharp cheddar cheese Freshly grated works better for melting.

Cooking Steps

  • In a large pot over medium heat, add the ground beef and break it apart as it cooks.
  • Drain any excess fat after browning the beef.
  • Add the chopped onions, cooking until translucent, about 5 minutes, then stir in minced garlic and sauté for another minute.
  • Stir in the diced tomatoes, beef broth, tomato sauce, and seasonings, then bring to a boil.
  • Add dry elbow noodles once boiling, reduce heat to simmer, and cook for about 20 minutes, stirring occasionally.
  • Remove from heat and stir in the cheddar cheese until melted and creamy.

Notes

This dish can be refrigerated for 3-4 days or frozen for longer storage. Reheat gently on the stove, adding broth to loosen if necessary. For variations, consider adding more vegetables or spices based on preference.
