Instructions
Preparation
Place chia seeds in a bowl and cover with almond milk. Stir gently to prevent clumping.
Soak the chia seeds for at least 4 hours or overnight for optimal texture.
After soaking, add maple syrup and stir well to combine.
Wash, slice strawberries and kiwi while the chia seeds are soaking.
Assembly
In serving glasses or bowls, layer chia pudding, followed by strawberries and kiwi.
Top with toasted coconut flakes and fresh mint leaves.
Notes
Store in an airtight container in the fridge for up to 4 days. Best enjoyed chilled.
