Salad Ingredients

  • 2 cups fresh corn (or canned/frozen corn) Fresh corn is ideal for sweetness and crunch, but canned or frozen corn works in a pinch. If using canned corn, drain it well.
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1/2 medium red onion, diced
  • 1/4 cup fresh cilantro, chopped If you're not a fan of cilantro, parsley can be a great substitute.

Dressing Ingredients

  • 1 Juice of 1 lime Use fresh lime juice for the best flavor!
  • 2 tablespoons olive oil
  • to taste Salt and pepper Adjust seasoning to taste before serving.

Preparation

  • In a large mixing bowl, combine the fresh corn, diced red bell pepper, diced green bell pepper, chopped red onion, and cilantro.
  • If using fresh corn, cook it briefly to enhance its sweetness and then let it cool before tossing it with the other ingredients.

Prepare the Dressing

  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until emulsified.
  • Use fresh lime juice for the best flavor!

Combine Ingredients

  • Pour the dressing over the corn mixture, and gently toss everything together until well-coated.
  • Be gentle when tossing to keep the vegetables intact.

Let it Sit

  • Let the salad sit for at least 15 minutes before serving to help the flavors meld.
  • If you can prepare it a few hours in advance, the flavors will intensify even more!

Serve

  • Serve the salad chilled or at room temperature.
  • Garnish with additional cilantro or lime wedges for a beautiful presentation.

Notes

This salad can be served as a side or main dish. Consider adding avocado or black beans for a heartier salad. Store in an airtight container in the refrigerator; it's best enjoyed fresh but can last for 2-3 days.
