  • 1 cup dried cranberries Dried cherries or raisins can be substituted based on preference.
  • 1 cup pistachios, shelled and chopped
  • 1 tsp vanilla extract
  • 1/4 tsp salt Balances the sweetness.

Preparation

  • Line an 8×8 inch baking dish with parchment paper.
  • In a saucepan, combine white chocolate chips and sweetened condensed milk over medium heat, stirring until melted and smooth.
  • Remove from heat and stir in vanilla extract and salt.
  • Fold in dried cranberries and chopped pistachios until even.
  • Pour the mixture into the prepared baking dish, spreading it evenly.
  • Refrigerate for 2-3 hours until set.
  • Lift the fudge from the pan using the parchment overhang and cut into squares.

Notes

Store in an airtight container in the refrigerator for up to two weeks or freeze for three months. Allow to thaw overnight in the refrigerator before serving. Add a dusting of powdered sugar for an elegant touch.
