Ingredients
  

Dry Ingredients

  • 1 ¾ cups all-purpose flour Substitute with cake flour for a lighter texture.
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder Dutch-processed cocoa can be used for a richer flavor.
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 2 large eggs Use room temperature for a better blend.
  • 1 cup whole milk Almond or non-dairy milk can be substituted.
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This creates a super moist batter.

Ganache

  • 1 cup heavy cream Light cream or half-and-half can be used as a substitute.
  • 8 ounces semi-sweet chocolate, chopped Use good quality chocolate for the best flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla to the dry ingredients and mix until well combined.
  • Carefully stir in the boiling water.
  • Pour the batter evenly into the prepared pans.

Baking

  • Bake for 30-35 minutes until a toothpick inserted comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting.

Ganache Preparation

  • Heat the heavy cream in a saucepan until just simmering.
  • Remove from heat and add the chopped chocolate, stirring until smooth.

Assembly

  • Once the cakes are completely cool, pour ganache over the first layer, add the second layer, and pour remaining ganache over the top.
  • Allow to set before serving.

Notes

Dust the cake with powdered sugar or cocoa powder before serving for an elegant touch.
