Ingredients
  

Main Ingredients

  • 1 pound ground beef or turkey Ground turkey is a healthier option; can use plant-based meat for a vegan version.
  • 1 packet taco seasoning Use homemade for customized spice level (combine chili powder, cumin, garlic powder, onion powder).
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 bag tortilla chips Can also use corn tortillas cut into triangles for a baked version.

Optional Toppings

  • sour cream
  • diced tomatoes
  • avocado
  • shredded lettuce
  • jalapeños

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground meat until browned, about 5-7 minutes.
  • Drain any excess fat.
  • Stir in the taco seasoning and follow packet instructions, adding a little water. Let it simmer for 2-3 minutes.
  • In a large mixing bowl, combine the seasoned meat, black beans, corn, and salsa. Mix well.
  • Taste the mixture before transferring to the pan and adjust seasoning if needed.

Baking

  • In a greased 9x13 inch baking dish, spread half the crushed tortilla chips, then the meat mixture, and top with half the cheese.
  • Add the remaining chips on top and sprinkle with the remaining cheese.
  • Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for another 10-15 minutes until cheese is bubbly and lightly golden.
  • Let cool for a few minutes and garnish with your choice of toppings.

Notes

Leftovers can be stored in the refrigerator for 3-4 days. Best reheated in the oven at 350°F for about 20 minutes.
