  • 2 leaves Lettuce leaves Provides a barrier for moisture.
  • 1 cup Julienned vegetables (carrots, cucumber, bell pepper) Fresh and crunchy; feel free to vary vegetables.

Preparation

  • Prepare the rice vermicelli noodles according to package instructions, then drain and set aside.
  • Soak a rice paper wrapper in warm water for 10-15 seconds until softened.
  • Lay the wrapper on a clean surface.
  • Layer a piece of lettuce, rice noodles, shredded chicken, fresh herbs, and julienned vegetables on the wrapper.
  • Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
  • Continue making spring rolls with the remaining ingredients.
  • Serve fresh with dipping sauce.

Notes
