Ingredients
  

Blue Layer

  • 2 tablespoons blueberry juice Use fresh or store-bought
  • 3/4 cup lemonade
  • 3 drops blue food coloring Optional for more color intensity
  • 1 tablespoon lemon zest Optional for added flavor

White Layer

  • 1/2 cup non-dairy key lime yogurt
  • 1/4 cup water

Red Layer

  • 1/2 pound fresh strawberries Chopped
  • 2 tablespoons sugar Adjust to taste
  • 1/4 cup water

Instructions
 

Preparation of Blue Layer

  • In a medium bowl, combine blueberry juice and lemonade.
  • Add food coloring if desired, pour into popsicle molds filling them one-third full.
  • Freeze for 1-2 hours or until firm.

Preparation of White Layer

  • Mix non-dairy key lime yogurt and water in a bowl until smooth.
  • Spoon the mixture over the frozen blue layer gently.
  • Return to freezer for another hour.

Preparation of Red Layer

  • Chop fresh strawberries and blend with sugar and water until smooth.
  • Pour the strawberry mixture into molds, filling them to the top.
  • Insert sticks and freeze for at least 4 hours or until solid.

Serving

  • Remove popsicles from molds by running under warm water for a few seconds.
  • Serve as is, or with toppings like melted dark vegan chocolate or toasted coconut.

Notes

Store leftover popsicles in an airtight container in the freezer for up to 1 month. Use parchment paper to prevent sticking.
