Ingredients
  

For the Mousse

  • 1 cup aquafaba (chickpea water) This replaces eggs in traditional mousse recipes.
  • 1/2 cup dark chocolate (melted) Use high-quality dark chocolate for richer flavor.
  • 1/4 cup powdered sugar Substitute with maple syrup for a less sweet version.
  • 1 teaspoon vanilla extract
  • 1 pinch salt Enhances the flavors.

Preparation

  • In a large mixing bowl, use a hand mixer to beat the aquafaba until stiff peaks form, taking about 10 minutes.
  • In another bowl, whisk together the melted dark chocolate, powdered sugar, vanilla extract, and pinch of salt until smooth.
  • Gently fold the whipped aquafaba into the chocolate mixture, being careful not to deflate the aquafaba.
  • Divide the mousse into serving dishes and refrigerate for at least 2 hours or until set.
  • Once set, serve the mousse chilled.

Notes

Garnish with fresh berries or vegan whipped cream for an elegant touch. Best served chilled. Can be made up to a day in advance.
