  • 3/4 cup unsweetened cocoa powder Dutch-processed cocoa can be used for a milder taste.
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder Use fresh for best results.
  • 1 1/2 teaspoons baking soda Use fresh for best results.
  • 1 teaspoon salt

Wet Ingredients

  • 2 large eggs Use room temperature for best results.
  • 1 cup whole milk Can substitute with almond or oat milk.
  • 1/2 cup vegetable oil Can substitute with melted coconut oil or applesauce.
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Incorporate slowly for a smooth batter.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.

Mixing

  • In a large bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla extract. Mix until well combined.
  • Slowly add the boiling water and stir until smooth.

Baking

  • Pour the batter evenly between the prepared cake pans.
  • Bake for 30-35 minutes or until a toothpick comes out clean.
  • Let the cakes cool in the pans for about 10 minutes before removing them.

Frosting

  • Once cooled, frost with your favorite chocolate frosting.

Notes
