  • 2 cloves garlic, minced

  • 1 teaspoon Italian seasoning

Serving Accompaniments

  • 1 cup pumpkin puree Can substitute with sweet potato puree or creamy mashed potato.
  • 1/2 cup marinara sauce For serving.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, egg, garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
  • Form the mixture into meatballs, about 1 inch in diameter.
  • Place the meatballs on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
  • Meanwhile, heat the pumpkin puree in a saucepan over medium heat until warm.
  • Serve the meatballs topped with marinara sauce and spoon the warm pumpkin puree on the side.

Notes

For extra flavor, let the mixture sit for 5 minutes before forming into meatballs. Uniform sizing helps with even cooking.
