  • 2 cups cherry tomatoes, halved Use canned tomatoes if fresh are out of season.
  • 1/4 cup fresh basil leaves, chopped Dried basil can be used; use one-third of the amount.
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, place the chicken breasts and season with salt and pepper.
  • In a bowl, mix together the cherry tomatoes, garlic, olive oil, and basil. Pour the tomato mixture over the chicken.

Cooking

  • Bake for 25-30 minutes, or until the chicken is cooked through and the tomatoes are blistered.
  • Serve warm and enjoy!

Notes

Ensure even cooking by letting the chicken sit at room temperature for about 15 minutes before baking. For added flavor, garnish with extra fresh basil before serving.
