  • 1.75 cups all-purpose flour You can substitute whole wheat flour for a nuttier flavor.
  • 1.5 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder Using Dutch-processed cocoa gives a darker color.
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 2 large eggs Using room temperature eggs helps create a smoother batter.
  • 1 cup whole milk Can be replaced with almond milk for a vegan version.
  • 0.5 cups vegetable oil Can be replaced with melted coconut oil or butter.
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Be careful when adding, the batter will be thin.

Preparation

  • Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together thoroughly until there are no lumps.
  • Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.
  • Carefully stir in the boiling water.
  • Pour the batter evenly into the prepared cake pans.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

Notes

Store covered in an airtight container for up to 5 days or freeze for longer storage. Always allow the cake to cool completely before frosting.
