Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the sausage over medium heat until browned; drain the excess fat.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper.

Assembly

  • In a greased baking dish, layer the tater tots, followed by the cooked sausage, and then pour the egg mixture over the top.
  • Sprinkle cheese generously on top of the casserole before baking.

Baking

  • Bake for 25-30 minutes or until the eggs are set and the cheese is bubbly.
  • Let cool for a few minutes, garnish with green onions if desired, and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze for up to 3 months, reheating in the oven at 350°F until heated through.
