Ingredients
  

Cereal Mixture

  • 3 cups Rice Chex cereal
  • 3 cups Corn Chex cereal
  • 3 cups Wheat Chex cereal
  • 1 cup pecans, chopped Can substitute with walnuts, almonds, or pumpkin seeds for a nut-free version.

Coating

  • 1 cup powdered sugar Use a fine sieve for even dusting.
  • 1/2 cup corn syrup Substitute with maple syrup or honey if unavailable.
  • 1/4 cup butter Melted in the coating step.
  • 1 teaspoon vanilla extract

Preparation

  • In a large mixing bowl, combine the Rice Chex, Corn Chex, Wheat Chex, and chopped pecans. Gently mix them together to ensure the cereals are evenly distributed.
  • In a small saucepan over medium heat, melt the butter, corn syrup, and vanilla extract. Stir continuously until the mixture is smooth and well combined.

Coating

  • Pour the melted butter mixture over the cereal and pecan combination. Stir gently but thoroughly until every piece is coated with the sweet mixture.

Baking

  • Spread the mixture evenly onto a baking sheet lined with parchment paper. Ensure it’s in a single layer for even baking.
  • Preheat your oven to 250°F (120°C) and bake the mixture for 45 minutes, stirring every 15 minutes.

Finishing Touches

  • Remove the baking sheet from the oven and allow it to cool completely.
  • Once cooled, sprinkle powdered sugar over the Chex Mix and toss gently to coat all pieces evenly.
  • Transfer the snack into an airtight container for storage.

Notes

To keep the Chex Mix fresh, store in an airtight container. It can be refrigerated for up to 2 weeks or frozen in a freezer-safe container for longer storage.
