Ingredients
  

For the Blueberry Jam

  • 1 pint fresh blueberries Select firm, plump, and deep purple blueberries.
  • 1/4 cup white sugar Adjust based on your sweetness preference.
  • Juice of 1 lemon lemon juice Provides acidity and enhances flavor.
  • 1 small bundle lemon thyme Tied with twine for easy removal.

For the Sandwiches

  • 8 slices sourdough bread 1/4 inch thick.
  • 4 oz white cheddar Freshly grated.
  • 4 oz whole milk mozzarella Shredded.
  • 4 tbsp butter For grilling.
  • to taste flaky sea salt Finish the sandwiches.

Instructions
 

Preparation of Blueberry Jam

  • In a small saucepan, mix the blueberries, white sugar, lemon juice, and tied lemon thyme.
  • Bring the mixture to a boil over medium heat while stirring gently.
  • Once boiling, reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally.
  • After 20 minutes, remove the thyme and let the jam cool at room temperature.

Assembling the Sandwiches

  • Spread the cooled blueberry jam on four slices of sourdough bread.
  • Layer the grated white cheddar and shredded mozzarella on top of the jam.
  • Top with the remaining four slices of sourdough bread.

Grilling the Sandwiches

  • Preheat a skillet over medium heat and melt 2 tablespoons of butter.
  • Cook two sandwiches in the skillet for 2-3 minutes on each side until golden and melty.
  • Repeat with remaining sandwiches, adding more butter if necessary.
  • Cut each sandwich in half and sprinkle with flaky sea salt before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. For longer storage, wrap and freeze sandwiches for up to a month. Reheat in a skillet to maintain crispiness.
