Ingredients
  

For the Filling

  • 2 tablespoons olive oil You can substitute with avocado or melted coconut oil.
  • 1 small onion, finely chopped Sauté until soft and translucent.
  • 2 cloves garlic, minced Be careful not to burn.
  • 3 cups fresh spinach, finely chopped Thawed, squeezed frozen spinach can also be used.
  • ½ cup crumbled feta cheese Can be replaced with goat cheese or ricotta.
  • ½ cup plain Greek yogurt Substitutes include any plain yogurt or sour cream.
  • to taste salt and black pepper Adjust according to preference.
  • 1 package soft flatbread rounds, wraps, or thin pastry sheets Use to assemble the bites.
  • pinch dried dill or oregano Optional for added flavor.

Instructions
 

Preparation

  • Heat the olive oil in a skillet over medium heat.
  • Add the finely chopped onion and sauté for about 4-5 minutes until soft and translucent.
  • Stir in the minced garlic and cook briefly until fragrant, about 1 minute.
  • Add the fresh spinach and cook for another 3-5 minutes until wilted and moisture is gone; then remove from heat and allow to cool slightly.
  • In a mixing bowl, combine the spinach mixture with crumbled feta cheese, plain Greek yogurt, and season with salt and black pepper to taste.
  • Spoon the filling onto flatbread or pastry sheets, then roll or fold them into small bites.

Baking

  • Preheat your oven to 375°F (190°C).
  • Place the assembled bites on a baking tray lined with parchment paper and bake for 15-18 minutes until lightly golden and warm.

Serving

  • Serve warm or at room temperature, possibly with remaining Greek yogurt as a dipping sauce.

Notes

Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 1 month. Reheat in the oven at 375°F for about 10 minutes.
