  • 3 cloves garlic, minced
  • 14 oz can crushed or diced tomatoes
  • 4 cups fresh spinach Can use frozen spinach, thawed and well-drained.
  • ½ teaspoon dried oregano Or Italian seasoning.
  • to taste Salt and black pepper
  • ½ cup shredded mozzarella or Parmesan Optional, for a creamy topping.
  • pinch chili flakes Optional, for a spicy kick.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat the olive oil in a skillet over medium heat.
  • Add the finely chopped onion and cook until soft and lightly golden.
  • Stir in the minced garlic and cook until fragrant.
  • Add in the crushed tomatoes, oregano, salt, and pepper; let it simmer for 5–7 minutes.
  • Fold in the spinach, cooking just until combined.
  • Transfer the mixture to a baking dish, top with cheese if using, and bake for 20–25 minutes until bubbly.

Notes

This casserole is versatile and can be customized with different cheeses or spices. For added flavor, consider splashing balsamic vinegar or incorporating cooked protein like quinoa or shredded chicken.
