Ingredients
  

Dry Ingredients

  • 1 cup cornmeal Coarsely ground grain that gives cornbread its distinct texture.
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder Ensure it's fresh for optimal rise.
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 1/4 cup melted butter Ensure it's not hot to avoid cooking the eggs.
  • 2 large eggs
  • 1/4 cup honey Can substitute with maple syrup.

For Topping

  • 1/2 cup honey butter Store-bought or homemade.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Grease a mini muffin tin with cooking spray or melted butter.

Mixing Ingredients

  • In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt. Whisk until combined.
  • In another bowl, whisk together milk, melted butter, eggs, and honey until smooth.
  • Pour the wet mixture into the dry ingredients and mix gently until just combined.

Baking

  • Scoop the batter into the mini muffin tin, filling each cup about 2/3 full.
  • Place the muffin tin in the preheated oven and bake for 12-15 minutes or until golden brown and a toothpick comes out clean.

Finishing Touches

  • Allow the poppers to cool slightly and then drizzle with honey butter.

Notes

Best served warm. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat in a preheated oven for best texture.
