  • 1 can (15 oz) black beans, drained and rinsed Canned beans are convenient. Rinse to remove excess sodium.
  • 1 can (15 oz) pinto beans, drained and rinsed Feel free to mix and match beans.
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup shredded cheddar cheese For a spicier variant, consider using pepper jack cheese.
  • 1 cup cream cheese, softened Low-fat cream cheese or Greek yogurt can be substituted for a lighter option.
  • 1/2 cup diced jalapeños (fresh or pickled) Adjust quantity based on desired spice level.
  • 1 teaspoon garlic powder Fresh garlic can be substituted.
  • 1 teaspoon onion powder Fresh onion can be substituted.
  • to taste Salt and pepper Adjust according to personal preference.

Preparation

  • In your slow cooker, add the crumbled cooked bacon, black beans, pinto beans, diced tomatoes (with juices), and cream cheese. Stir well to combine everything.
  • Sprinkle in the garlic powder and onion powder, then stir again to mix everything thoroughly.
  • Set your slow cooker to low and cook for 2-3 hours until everything is heated through and the cream cheese is melted.
  • Once the mixture is heated, stir in the shredded cheddar cheese and diced jalapeños. Cook for an additional 30 minutes until the cheese is fully melted.
  • Taste your dip and season with salt and pepper as desired. Serve warm with tortilla chips or your favorite dipping items.

Notes

For easy cleanup, use a slow cooker liner. Store leftovers in an airtight container for up to 4 days. This dip can be frozen for up to 3 months. To reheat, use the microwave or stovetop with a splash of milk or cream to restore creaminess.
