  • 16 ounces spaghetti Cook according to package directions.
  • 3 tablespoons olive oil Use for sautéing.
  • 1 small onion, sliced For flavor base.
  • 5 cloves garlic, minced Add fragrance.
  • 3 tablespoons tomato paste Deepens the sauce's flavor.
  • 150 mls white grape juice (or fish broth) Adds sweetness or depth.
  • 2 cups tomato sauce Primary sauce component.
  • 12 ounces mixed seafood (such as shrimp, squid, and fish) Use personal favorites.
  • 1/2 pound mussels, scrubbed Discard any that do not open.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon pepper To enhance flavor.
  • 2 tablespoons parsley, finely chopped Garnish before serving.

Instructions
 

Preparation

  • Start by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Drain the pasta, reserving a cup of pasta water for later.
  • In a large skillet, heat 3 tablespoons of olive oil over medium heat.
  • Add the sliced onion and sauté until it turns translucent, about 3-4 minutes. Then add the minced garlic, cooking for an additional minute until fragrant.
  • Stir in 3 tablespoons of tomato paste and cook for another 2 minutes.
  • Pour in 150 mls of white grape juice (or fish broth) and bring the mixture to a simmer for about 3-4 minutes.
  • Mix in 2 cups of tomato sauce, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and half of the chopped parsley. Let it simmer gently for 5 minutes.
  • Add the mixed seafood and mussels to the sauce, cooking until the mussels open and seafood is cooked through, about 5-7 minutes.
  • Add the cooked spaghetti directly into the skillet with the sauce, tossing to combine. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  • Finally, garnish with the remaining parsley before serving.

Notes

Serve with a chilled glass of Sauvignon Blanc or Pinot Grigio, and consider pairing with garlic bread and a simple arugula salad for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 3 days.
