Main Ingredients

  • 1 lb Jumbo lump crab Star ingredient; substitute with canned crab or shrimp if needed.
  • 1 cup Fresh corn kernels
  • 4 tbsp Butter For sautéing vegetables.
  • 1 medium Onion, chopped
  • 2 stalks Celery, diced
  • 2 cloves Garlic, minced
  • 2 medium Potatoes, diced
  • 4 cups Fish or chicken stock Can substitute with vegetable broth for a vegetarian version.
  • 1 cup Heavy cream Can substitute with half-and-half or coconut milk for lighter variation.
  • 1 tsp Salt To taste.
  • 1 tsp Pepper To taste.
  • 2 tbsp Fresh parsley, chopped For garnish.

Preparation

  • Heat a large pot over medium heat and add the butter. Allow it to melt completely.
  • Add the chopped onion, diced celery, and minced garlic to the pot. Sauté until softened, about 5-7 minutes.
  • Stir in diced potatoes and pour in the fish or chicken stock. Bring to a boil, then reduce heat and simmer until potatoes are tender, approximately 15-20 minutes.
  • Once potatoes are cooked through, stir in fresh corn kernels and jumbo lump crab meat. Pour in the heavy cream and cook until heated through.
  • Ladle the chowder into bowls, garnishing with freshly chopped parsley.

Notes

Serve with a squeeze of lemon juice for enhanced seafood flavor. Pair with crisp white wine or a light beer, and crusty bread or a salad for a complete meal.
