Preparation
Gather all ingredients. Cut beef into 2-inch chunks, slice onions, and mince garlic.
Tip: Slightly freeze the beef for easier cutting.
Sauté for Flavor
Heat oil in a skillet over medium heat and sauté onions until golden brown (10-15 minutes).
Add minced garlic and sauté for an additional minute, being careful not to burn.
Tip: Add salt to onions while sautéing to enhance sweetness.
Build Your Base
Transfer sautéed onions and garlic to the slow cooker. Add the beef chunks and mix well.
Pour in beef broth, Worcestershire sauce, thyme, and rosemary.
Tip: Reduce dried herbs if using them.
Let It Simmer
Cover the slow cooker and cook on LOW for 8 hours or HIGH for 4 hours.

Make It Thick
Remove beef chunks and set aside. Mix cornstarch and cold water to create a slurry.

Return beef to the thickened gravy and stir to coat.
