  • 1 cup diced vegetables Use bell peppers, spinach, onions, or other vegetables as desired.
  • 1 cup shredded cheese Cheddar, feta, or your choice of cheese.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the eggs and milk.
  • Stir in the diced vegetables, cheese, salt, and pepper.
  • Grease a muffin tin with cooking spray or line with muffin liners.
  • Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.

Baking

  • Bake for 20-25 minutes, or until the muffins are set and lightly golden.
  • Allow to cool slightly before removing from the tin.

Serving

  • Serve warm or store in the refrigerator for a quick breakfast option.
