Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add a splash of olive oil. Once hot, add the finely chopped onion, celery, and minced garlic. Sauté for about 5 minutes until softened.
  • In a large mixing bowl, combine the ground turkey, sautéed vegetables, breadcrumbs, cranberries, sage, thyme, salt, pepper, eggs, and chicken broth. Mix thoroughly but avoid overmixing.
  • With slightly wet hands, roll the mixture into balls about 1 to 1.5 inches in diameter to yield approximately 24 bites.
  • Place the balls on a greased or parchment-lined baking sheet. Drizzle olive oil over the bites.
  • Bake for 20-25 minutes until golden brown and cooked through to an internal temperature of 165°F (74°C).
  • Let cool for a few minutes before serving.

Notes

These bites can be served as appetizers, snacks, or side dishes. They are freezer-friendly and can be stored in an airtight container in the refrigerator for 3-4 days.
