  • 8 oz pasta of choice Any type of pasta can be used.
  • 1 lb sausage (Italian or your preference) Can substitute with chicken or plant-based sausage.
  • 2 cups mixed vegetables (bell peppers, zucchini, spinach) Feel free to use any vegetables on hand.
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken or vegetable broth Use broth for more flavor.
  • 1 cup shredded cheese (mozzarella or cheddar) Adjust according to preference.
  • 1-2 tbsp olive oil For cooking.
  • Salt and pepper to taste
  • Italian seasoning to taste

Preparation

  • In a large pot, heat about 1-2 tablespoons of olive oil over medium heat.
  • Add the sausage to the pot. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes.
  • Stir in the minced garlic and mixed vegetables, cooking until the veggies are tender, about 3-5 minutes.
  • Add the pasta, diced tomatoes, and chicken or vegetable broth to the pot. Bring everything to a simmer.
  • Cover the pot and let it cook until the pasta is al dente, about 8-10 minutes. Stir occasionally.
  • Once the pasta is cooked, stir in the shredded cheese until melted into a creamy sauce.
  • Season with salt, pepper, and Italian seasoning to your liking. Stir well to integrate.
  • Scoop the sausage pasta veggie into bowls and enjoy warm!

Notes

Serve in large bowls for a family-style meal. Top with extra cheese or fresh herbs for a beautiful presentation.
