  • 1/2 teaspoon Pepper To taste.

For the Yogurt Dip

  • 1 cup Yogurt Greek yogurt preferred for creaminess.
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Garlic powder Optional.
  • 1 teaspoon Fresh herbs For garnish; optional.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the sweet potatoes into rounds, aiming for ½ inch thick.
  • Toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  • Arrange the rounds in a single layer on a baking sheet lined with parchment paper.

Roasting

  • Roast in the oven for 25-30 minutes, flipping halfway through, until golden and tender.

Making the Dip

  • Meanwhile, in a bowl, mix the yogurt with lemon juice, garlic powder, and a pinch of salt.
  • Let the dip chill in the fridge while the sweet potatoes roast.

Serving

  • Serve the roasted sweet potatoes with the yogurt dip and garnish with fresh herbs if desired.
