Ingredients

For the Pickled Onions

  • 1 large red onion, thinly sliced Red onions are slightly sweeter and provide beautiful color. Yellow or white onions can be substituted, but flavor and color will differ.
  • 1 cup apple cider vinegar Can be substituted with white wine vinegar for a variation in flavor.
  • 1 cup water
  • 2 tablespoons sugar Balances the sourness; honey or agave can be used as healthier options.
  • 1 tablespoon salt Key for the pickling process; enhances flavor.
  • Optional: spices or herbs (e.g., whole peppercorns, garlic, or bay leaves) Customize the pickling liquid with additional flavors.

Instructions

Preparation

  • Thinly slice the red onion and place them in a clean, heatproof jar.
  • In a saucepan, combine the vinegar, water, sugar, and salt. Heat over medium heat until the sugar and salt dissolve.
  • Pour the hot pickling liquid over the onions in the jar, ensuring they’re completely covered.
  • Allow the jar to cool to room temperature before sealing it and placing it in the refrigerator.
  • For best results, let the onions sit for at least 1 hour before enjoying. They improve in flavor when refrigerated for a longer time.

Notes

Store in a tightly sealed glass jar in the fridge. They last for about 2-3 weeks. Not recommended to freeze. Serve cold or at room temperature.
