  • 1 cup quinoa Rinse before adding to remove bitterness.
  • 4 cups vegetable broth Can be substituted with water or chicken broth.
  • 2 cups kale, chopped Could replace with spinach or Swiss chard.
  • 1 can (14 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • to taste salt and pepper

Optional Toppings

  • avocado Adds creaminess and extra nutrients.
  • parsley For garnish.

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and minced garlic. Sauté until they soften and the onions turn translucent, about 3-5 minutes.
  • Stir in the quinoa, diced tomatoes, and vegetable broth. Bring the mixture to a boil.
  • Reduce heat to a low simmer, cover the pot, and let it cook for about 15 minutes, or until the quinoa is cooked and fluffy.
  • Once the quinoa is cooked, add the chopped kale to the pot. Cook for an additional 5 minutes until the kale wilts.
  • Season your stew with salt and pepper to taste. Serve hot, topped with slices of avocado or a sprinkle of parsley, if desired.

Notes

Store in an airtight container in the refrigerator for up to 4 days. The stew freezes well, store in freezer-safe containers.
