  • 1 pound Large shrimp (peeled and deveined) Fresh or frozen, thaw properly if frozen.
  • 3 cloves Garlic (minced) Fresh garlic enhances the flavor.
  • 2 tablespoons Olive oil (extra virgin) Extra virgin is preferred for flavor.
  • 1 tablespoon Butter
  • 1 teaspoon Red pepper flakes (optional) Omit for less spice.
  • 2 tablespoons Fresh parsley (chopped)
  • 2 wedges Lemon (for garnish) Squeeze fresh lemon juice for added flavor.
  • 2 cups Cooked pasta or rice (optional) For serving.
  • 4 cups Mixed greens or garden salad (optional) For serving.

Instructions
 

Preparation

  • In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat until shimmering.
  • Add the peeled and deveined shrimp in a single layer. Cook for about 2 minutes on one side without stirring.
  • Once the shrimp are pink and opaque on one side, flip them over. Add in the minced garlic and butter, stirring gently.
  • Sprinkle in the red pepper flakes (if using) and season with salt and pepper. Cook for another 2-3 minutes until shrimp are fully cooked and tender.
  • Remove from heat and mix in the chopped fresh parsley. Garnish with lemon wedges before serving.

Notes

For meal prep, consider cooking shrimp on the day you plan to eat for the best flavor. Leftovers can be stored in an airtight container for up to 2 days.
