Main Ingredients

  • 6 large large eggs
  • 1 cup cottage cheese Adds creaminess; can substitute with blended silken tofu for dairy-free.
  • 1/2 cup spinach, chopped Can use frozen spinach; drain excess moisture.
  • 1/2 piece bell pepper, diced Can substitute with diced zucchini or mushrooms.

Seasonings

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

For Greasing

  • 1 can Cooking spray or oil For greasing the muffin tin.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  • In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  • Add in the chopped spinach, diced bell pepper, salt, black pepper, garlic powder, and onion powder. Stir until evenly distributed.
  • Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until the egg bites are puffed and golden.
  • Let them cool slightly before removing from the tin.

Notes

Perfect for meal prep and can be stored in the refrigerator for up to 4 days. For freezing, use freezer-safe bags separating layers with parchment paper.
