Preparation

  • Gather all your ingredients to streamline the process.
  • In a mixing bowl, whisk together the pumpkin purée, eggs, and milk until smooth, ensuring no lumps remain.
  • Add vanilla extract, ground cinnamon, ground nutmeg, ground ginger, salt, and brown sugar (if using) and whisk until well combined.
  • Let the batter rest for a few minutes.

Cooking

  • Heat your skillet over medium heat and add butter or oil until lightly bubbling.
  • Dip each slice of bread into the batter, coating both sides evenly and making sure not to soak for too long.
  • Cook the soaked bread on the skillet for 3–4 minutes on each side, or until golden brown and crispy.
  • Stack the cooked slices on plates and drizzle with maple syrup, sprinkle with powdered sugar, and add nuts if desired.

Notes

To store leftovers, refrigerate in an airtight container for up to 3 days, or freeze for up to 2 months. Reheat in a toaster or skillet.
