  • 1/2 teaspoon vanilla extract

Preparation

  • In a mixing bowl, combine rolled oats, pumpkin puree, peanut butter, honey (or maple syrup), pumpkin pie spice, and vanilla extract.
  • Mix until all ingredients are well incorporated.
  • Fold in chocolate chips if desired.
  • Roll the mixture into small balls, about 1 inch in diameter.
  • Place the balls on a parchment-lined baking sheet.
  • Refrigerate for at least 30 minutes to firm up.

Notes
