Ingredients
  

For the casserole

  • 1 lb Ground beef or Italian sausage Can substitute with turkey or plant-based meat.
  • 2 cups Bell peppers, chopped Any color of bell peppers will work.
  • 1 medium Onion, chopped Adds flavor and sweetness.
  • 2 cups Pizza sauce Marinara sauce can be used as a substitute.
  • 3 cups Cooked pasta (penne or rotini) Ensure pasta is cooked al dente.
  • 2 cups Mozzarella cheese, shredded Can substitute with provolone or spicy pepper jack.
  • 0.5 cup Parmesan cheese, grated Adds a nice flavor layer.
  • 1 tbsp Italian seasoning Enhances flavor profile.
  • to taste Salt and pepper Adjust according to preference.
  • 1 tbsp Olive oil For cooking meat.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat the olive oil over medium heat and cook the ground meat until browned. Drain excess fat.
  • Add chopped bell peppers and onions, cooking until softened, about 5-7 minutes.
  • Stir in the pizza sauce, Italian seasoning, salt, and pepper. Let it simmer for 2-3 minutes.
  • In a large bowl, mix the cooked pasta with the meat sauce and fold in half of the mozzarella cheese.
  • Layer half of the pasta mixture in a greased baking dish, then top with half of the remaining mozzarella. Add the rest of the pasta and finish with the remaining cheese.

Baking

  • Cover the dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake an additional 10-15 minutes until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to 3-4 days. Can freeze for up to 3 months, wrapped properly. Reheat in the oven or microwave.
