Ingredients
  

For the Cake

  • 2 cups all-purpose flour For a gluten-free version, substitute with a 1:1 gluten-free flour blend.
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened Can substitute with salted butter, use cautiously with extra salt.
  • 1 cups milk Whole milk is recommended for richness.
  • 3 large eggs Bringing to room temperature helps emulsify better.
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • as needed pink food coloring Start with a few drops and adjust to desired shade.

For the Frosting

  • 1 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 2-4 tablespoons milk Add until desired spreadable consistency is achieved.
  • as needed pastel sprinkles For decoration.

Preparation

  • Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large bowl, cream together softened butter and granulated sugar until the mixture is light and fluffy.
  • Add eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry mixture to the wet ingredients, alternating with the milk, and mix until just combined.
  • Incorporate pink food coloring to the batter until your desired shade is achieved, then mix again.

Baking

  • Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then carefully turn them out onto wire racks to cool completely.

Frosting and Decoration

  • For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar while mixing, then add milk until the frosting reaches the desired spreadable consistency.
  • Once the cakes are completely cooled, spread frosting on the top of one layer, place the second layer on top, and frost the top and sides of the cake.
  • Adorn the cake with pastel sprinkles to add a fun touch.

Notes

For best results, don’t overmix the batter, use room temperature ingredients, and ensure complete cooling before frosting.
