Ingredients
  

For the Marinade

  • 1 cup pineapple juice Can substitute with fresh blended pineapple, avoid sweetened varieties.
  • 2 tablespoons soy sauce Substitution: tamari or coconut aminos for gluten-free option.
  • 1 tablespoon honey Vegan substitute: use maple syrup or agave nectar.
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger (grated)
  • to taste salt and pepper
  • 1 tablespoon olive oil

For Serving

  • 4 pieces chicken thighs Bone-in or boneless can be used.

Instructions
 

Preparation

  • In a large bowl, combine pineapple juice, soy sauce, honey, garlic powder, grated ginger, salt, and pepper. Whisk everything together until well mixed.
  • Place the chicken thighs in a zip-lock bag or a shallow dish and pour the marinade over them, ensuring they are fully submerged.
  • Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight.

Cooking

  • Preheat the oven to 400°F (200°C).
  • Remove chicken from the marinade and shake off excess.
  • Place the chicken thighs in a baking dish and drizzle with olive oil.
  • Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 5 minutes prior to serving.

Notes

Allow marination for as long as possible for best flavor. Pair with side dishes like jasmine rice and steamed vegetables.
