For the Cake

  • 2 cups all-purpose flour Substitute with a 1:1 gluten-free flour blend for a gluten-free option.
  • 1.75 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder Dutch-processed cocoa can be used for a milder taste.
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs Use room temperature for better emulsion.
  • 1 cup whole milk Use plant-based milk for a vegan option.
  • 0.5 cups vegetable oil Can be replaced with melted coconut oil or applesauce.
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Enhances chocolate flavor.

For the Peanut Butter Frosting

  • 1 cup creamy peanut butter Can substitute with crunchy peanut butter.
  • 1 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 0.5 cups heavy cream Coconut cream can be used as a lighter alternative.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, oil, and vanilla. Mix until smooth, then stir in boiling water.
  • Distribute the batter evenly into the prepared pans.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted comes out clean.

Frosting

  • While the cakes cool, beat the peanut butter and melted butter until creamy. Gradually add powdered sugar and then heavy cream for desired consistency.

Assembling

  • Once cooled, layer cakes with frosting in between each layer and frost the top and sides.

Decoration

  • Decorate with sprinkles, chocolate chips, or a drizzle of melted chocolate as desired.

Notes

Store in an airtight container in the fridge for up to 5 days. Can freeze wrapped layers for up to 3 months.
