  • 1 sheet vegan puff pastry Use traditional puff pastry if vegan options aren't available.
  • 2-3 pieces fresh peaches, sliced Substitute with nectarines or berries if peaches are out of season.
  • 1 cup coconut whipped cream Can substitute with regular whipped cream or any plant-based topping.
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting Optional.

Preparation

  • Preheat oven to 400°F (200°C).
  • Roll out the vegan puff pastry on a lightly floured surface.
  • Place the rolled pastry into a tart pan, pressing gently.
  • Prick the bottom of the pastry with a fork.
  • Bake for 15-20 minutes until golden brown.

Assembly

  • While the pastry is baking, whip the coconut cream with maple syrup and vanilla extract.
  • Spread the whipped cream over the cooled tart base.
  • Arrange sliced peaches on top of the whipped cream.
  • Dust with powdered sugar if desired.
  • Slice and serve chilled.

Notes

Pair with ice cream for extra indulgence. Serve chilled with sparkling water or a light white wine. Store sealed in the refrigerator for up to 3 days.
