  • 1 cup breadcrumbs Consider using panko for extra crunch.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the zucchinis into rounds about 1/4 inch thick.
  • In a bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Dip each zucchini round into the breadcrumb mixture, coating both sides.
  • Arrange the coated zucchini on a baking sheet lined with parchment paper.
  • Lightly drizzle olive oil over the arranged zucchini rounds.
  • Bake in the oven for about 20-25 minutes, until golden brown and crispy.
  • Serve warm, optionally garnished with fresh herbs.

Notes

For best results, ensure even coating of the zucchini and avoid overcrowding the baking sheet.
