Ingredients
  

Chicken and Coating

  • 1 pound Chicken tenders Can substitute with sliced chicken breasts or thighs.
  • 1 cup Panko breadcrumbs Can use regular breadcrumbs, but texture might not be as crispy.
  • 1 teaspoon Garlic powder
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive oil Helps the breadcrumb mixture adhere.
  • Cooking spray
  • 1 tablespoon Fresh herbs (parsley and thyme) Feel free to substitute with other fresh herbs like oregano or basil.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a medium bowl, combine panko breadcrumbs, chopped herbs, garlic powder, salt, and pepper.
  • Coat each chicken tender with olive oil.
  • Dredge each oil-coated tender in the breadcrumb mixture, pressing the crumbs onto the chicken.
  • Place the tenders on a baking sheet lined with parchment paper and spray lightly with cooking spray.
  • Bake in the preheated oven for 15-20 minutes or until golden brown and fully cooked (internal temperature should reach 165°F).
  • Remove from the oven and let them rest for a couple of minutes before serving.

Notes

To keep tenders fresh, store in an airtight container in the fridge for up to 3 days. For freezing, wrap each tender and place in a freezer bag for up to 2 months.
