  • 1 lb ground beef You can use ground turkey or chicken as a leaner alternative.
  • 1 bell pepper, diced Sweet bell pepper preferred; poblano or jalapeño can be used for an extra kick.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 15 oz can diced tomatoes Fresh tomatoes can be used, peel and chop them finely.
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish Adds flavor and color.

Preparation

  • In a large skillet over medium heat, add the ground beef and cook until browned (about 5-7 minutes).
  • If your beef is particularly fatty, drain the excess fat to avoid a greasy skillet.
  • Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are tender (about 5 minutes).
  • Stir in the canned diced tomatoes, chili powder, cumin, salt, and pepper until well mixed.
  • Allow the mixture to simmer for about 10 minutes until heated through.
  • Serve hot, garnished with fresh cilantro.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat gently in a skillet or microwave.
