  • 1/2 cup sun-dried tomatoes, chopped Adds a sweet, tangy flavor.
  • 1 cup feta cheese, crumbled For a non-dairy option, use almond or soy-based cheese.

Dressing Ingredients

  • 1/4 cup olive oil Use extra-virgin for best flavor.
  • 2 tablespoons balsamic vinegar Choose a quality aged balsamic for richer taste.
  • 1/2 teaspoon garlic powder For an extra punch, consider using fresh minced garlic instead.
  • Salt and pepper to taste

Garnish

Instructions

Preparation

  • Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
  • Drain the orzo in a colander and rinse with cold water to stop the cooking process.
  • Add the cooled orzo, chopped sun-dried tomatoes, and crumbled feta cheese to a large mixing bowl. Gently toss to combine.

Dressing

  • In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper. Adjust the seasoning to taste.

Assembly

  • Pour the dressing over the pasta mixture and toss until well-coated.
  • Garnish with fresh basil or parsley before serving.
  • Allow to sit for at least 10 minutes or chill in the refrigerator until ready to serve.

Notes

This salad can be stored in the refrigerator for up to 3 days. For best presentation, layer the ingredients in a clear bowl to showcase the colorful layers of feta, tomatoes, and orzo.
