Ingredients
  

For the chicken

  • 1 lb boneless skinless chicken breasts, thinly sliced Turkey or tofu can be used as alternatives.
  • 1 tbsp olive oil
  • ¾ tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp fajita or taco seasoning Substitute with homemade seasoning if needed.

For the pasta and vegetables

  • 1 yellow onion thinly sliced
  • 3 bell peppers, thinly sliced (mix of colors) Use a variety for visual appeal.
  • 3 cloves garlic, minced
  • 1 ½ cups dry short pasta (like penne or fusilli) Whole wheat or gluten-free pasta can be used.
  • 3 ½ cups low-sodium chicken broth
  • ½ cup milk Can be replaced with heavy cream for richness.
  • 3 oz cream cheese, cubed Greek yogurt can be used for a lighter option.
  • ¾ cup shredded cheddar or Monterey Jack
  • 1–2 tsp lime juice
  • Fresh cilantro, chopped For garnish.

Instructions
 

Preparation

  • In a bowl, toss the sliced chicken breasts with kosher salt, black pepper, and fajita seasoning. Let sit for 10 minutes.
  • In a large pan, heat the olive oil over medium-high heat. Add the seasoned chicken and cook until lightly golden, about 4-5 minutes. Remove from the pan.
  • In the same pan, add the sliced onions and bell peppers. Cook until softened, about 4-5 minutes. Stir in minced garlic and cook for another minute.
  • Add dry pasta to the pan and stir for about 2 minutes to toast.
  • Pour in the chicken broth and bring to a simmer. Cook for 7-9 minutes, until the pasta is nearly al dente.
  • Stir in the milk and cream cheese, mixing until smooth.
  • Return the chicken to the pan and mix gently. Simmer for another 2-3 minutes.
  • Remove from heat and stir in the shredded cheese and lime juice until melted.

Serving

  • Top with freshly chopped cilantro and serve immediately.
  • Offer additional lime wedges and toppings like sour cream.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge. For freezing, use a freezer-safe container.
