  • 12-14 oz smoked sausage, sliced into ¼-inch coins Can substitute with kielbasa, turkey sausage, or plant-based options.
  • 1 lb baby potatoes, quartered Optionally use 3 medium russets, diced ¾-inch.
  • 1 tbsp olive oil
  • 1 tbsp butter
  • ½ small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 cup chicken broth (low-sodium)
  • ½ cup sour cream (or heavy cream) For a lighter option, use Greek yogurt.
  • 1 packet ranch seasoning (or 2 tbsp homemade)
  • 1 ½ cups shredded cheddar, divided
  • ½ tsp black pepper
  • to taste salt
  • to garnish fresh parsley or chives, chopped
  • ½ tsp smoked paprika

Instructions
 

Preparation

  • Heat a wide skillet over medium-high heat. Add the olive oil, then place the sliced sausage in a single layer. Cook for 3–4 minutes until browned.
  • Lower the heat to medium, add butter and onion. Cook for 2–3 minutes until the onion is translucent, then stir in minced garlic and sauté for 30 seconds.
  • Incorporate the quartered baby potatoes, black pepper, and salt into the onion mixture. Stir, pour in the chicken broth, cover and simmer for 8–10 minutes until the potatoes are fork-tender.
  • Stir in the ranch seasoning and sour cream until combined, making a silky sauce.
  • Stir in the mixed vegetables and browned sausage, cover, and simmer for 3–4 minutes until heated through.
  • Stir in 1 cup of shredded cheddar until melted. Sprinkle the remaining cheddar on top, cover, and heat for another 30-60 seconds.
  • Taste and adjust the salt if needed. Garnish with chopped parsley or chives before serving.

Notes

For an extra cheesy finish, use a mix of your favorite cheeses. Allow the dish to sit for a few minutes after cooking for the best flavor melding.
