Preparation

  • Line a baking sheet with parchment paper and set it aside.
  • In a saucepan over medium heat, combine the unsalted butter, milk, cocoa powder, granulated sugar, and brown sugar.
  • Stir constantly until the mixture comes to a gentle boil (about 2–3 minutes).
  • Remove the saucepan from the heat and stir in the creamy peanut butter and vanilla extract until fully melted and smooth.
  • Add the quick oats to the mixture and stir until everything is well coated.
  • Fold in any optional ingredients like chopped Reese’s peanut butter cups or chocolate chips.
  • Drop spoonfuls of the dough onto the prepared baking sheet.
  • Allow the cookies to sit at room temperature for about 30 minutes, or refrigerate to firm up faster.

Notes

Store cookies in an airtight container in the fridge for up to one week. They can also be frozen for up to three months. Reheat in the microwave for 10-15 seconds if desired.
