Base Ingredients

  • 1 cup rolled oats Provides the base structure of the bars.
  • 1 cup peanut butter Use a natural peanut butter without added sugars and oils.
  • 1/2 cup honey or maple syrup Serves as sweetener and binder.
  • 1/2 cup chocolate chips Optional; adds sweetness and richness.
  • 1/2 cup chopped nuts Optional; adds crunch and healthy fats.
  • 1/4 teaspoon salt Enhances flavor.

Preparation

  • In a large mixing bowl, combine rolled oats, peanut butter, honey (or maple syrup), and salt. Stir until well mixed.
  • If using chocolate chips and/or chopped nuts, gently fold them into the oat mixture.
  • Line an 8x8 inch baking dish with parchment paper, leaving some overhang.
  • Transfer the oat mixture to the lined dish and press it down evenly to create a compact surface.
  • Place the dish in the refrigerator for at least 1 hour or until set.
  • Once set, lift the mixture out of the dish using the parchment overhang and transfer it to a cutting board. Cut into bars.

Storage

  • Store the bars in an airtight container in the fridge for up to a week.

Notes

Use a spatula to mix the ingredients due to the thick consistency. Dampen your hands when pressing down to help prevent sticking. They're perfect for meal prep!
