Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs For a richer crust, consider using digestive biscuits or Oreo cookies.
  • 1/3 cup sugar
  • 1/3 cup unsalted butter, melted

For the Filling

  • 4 8-ounce packages cream cheese, softened If using low-fat, texture may be slightly altered.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 can (21 ounces) cherry pie filling Can be substituted with other fruit fillings like blueberry or strawberry.

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand, then press it into the bottom of a springform pan.
  • In a large bowl, beat softened cream cheese with sugar and vanilla extract until smooth and creamy.
  • Add the eggs, one at a time, mixing well after each addition until just combined.
  • Pour the cream cheese mixture over the crust, then drop spoonfuls of cherry pie filling on top. Use a knife to gently swirl the filling into the cream cheese mixture.

Baking

  • Place the springform pan in the oven and bake for 55-60 minutes or until the center is set but still slightly jiggly.

Cooling

  • Once done, turn off the oven and crack the door, allowing the cheesecake to cool slowly for about an hour.
  • After that, refrigerate for at least 4 hours before serving, preferably overnight.

Notes

Serve with a glass of sweet iced tea, coffee, or a dessert wine. Garnish each slice with whipped cream and a drizzle of cherry sauce for presentation.
