  • 2 pieces flour tortillas
  • 1 cup refried beans You can use black beans or pinto beans as an alternative.
  • 1 cup salsa Use your choice of mild or spicy salsa.
  • 1 cup shredded cheese Cheddar or a Mexican blend; can substitute with pepper jack or vegan cheese.
  • 1 cup cooked ground beef or shredded chicken Optional; can use turkey for a leaner option or omit for vegetarian.
  • 1/2 cup black olives, sliced Optional.
  • 1/4 cup green onions, chopped
  • to taste fresh cilantro for garnish Add after baking for freshness.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Spread the refried beans on one tortilla.
  • Layer the salsa over the beans.
  • Sprinkle the cheese evenly across the salsa layer.
  • If using, add the cooked ground beef or chicken.
  • Top with black olives and green onions.
  • Carefully place the second tortilla on top.

Baking

  • Bake for 15-20 minutes or until the cheese is bubbly.
  • Remove from the oven and let it cool for a few minutes before slicing.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator, or wrap in aluminum foil and freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for about 10 minutes.
