Vinaigrette

Preparation

  • Boil the potatoes in a large pot covered with cold water and a pinch of salt.
  • Bring to a boil, then simmer for 15-20 minutes until fork-tender.
  • Drain the potatoes and cool completely before cutting into bite-sized cubes, leaving the skin on for added nutrients.
  • In a large bowl, combine cooled potato cubes, olives, feta cheese, and chopped herbs.

Making the Vinaigrette

  • In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.
  • Adjust seasoning to taste, combining until well blended.

Assembly

  • Pour the vinaigrette over the salad and gently toss to combine.
  • Chill for at least 30 minutes before serving for best flavor.

Notes
