Ingredients
  

For the roasted chickpeas

  • 1 can chickpeas, rinsed and drained Canned chickpeas for convenience; you can also cook dried chickpeas.
  • 1 tablespoon olive oil Can substitute with neutral oils like avocado or canola.
  • 1 teaspoon smoked paprika Regular paprika or cayenne can replace if unavailable.
  • 1/2 teaspoon salt

For the salad

  • 1 lime, juiced Adds brightness and flavor.
  • 1 cup cherry tomatoes, halved
  • 1 whole cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 avocado, diced Can be omitted or replaced with Greek yogurt.

Instructions
 

Preparation of Chickpeas

  • Preheat the Oven to 400°F (200°C).
  • In a bowl, toss chickpeas with olive oil, smoked paprika, and salt.
  • Spread the chickpeas on a baking sheet in a single layer.
  • Roast for 20-25 minutes until crispy, stirring halfway through.

Combining Ingredients

  • In a large bowl, combine the roasted chickpeas, lime juice, cherry tomatoes, cucumber, red onion, parsley, and avocado.
  • Toss gently to combine.

Serving

  • Serve immediately and enjoy!

Notes

This salad can be stored for up to 3 days in an airtight container. Avoid freezing to maintain texture.
